Serves 4
1 bunch watercress
1 tsp mixed peppercorns
1 tsp mustard seed
1 clove garlic, crushed
3 tbsp olive oil
1 tbsp balsamic vinegar
1/4 tsp brown sugar
1/4 tsp salt
Freshen the watercress in chilled water for about 10 minutes.
Meanwhile, using a pestle and mortar, mix and crush all the dressing ingredients together.
Drain and shake dry the watercress, add the dressing, toss and serve.
